In 2015 Dan Taylor and Matt Hengeveld began Monocacy Coffee as a means to bring specialty grade coffees to the Lehigh Valley. Lighter roasts mean a flavor that’s closer to what the grower intended, it means cleaner chocolate notes, brighter hints of cherry, and far less bitterness. It’s a modern take on roasting that requires quality sourced coffees, and a sound understanding of Maillard reaction and caramelization complexities that occur during roasting. Sourcing and blending specialty grade coffees to achieve desirable and tasty espresso and coffee drinks is the ultimate goal of a great coffee roaster. Equal parts science and artistry, Matt and Dan take pride in using their skills to bring higher quality coffee to Lehigh Valley restaurants and institutions.
